Recipe: Chocolate Pecan bar

I made this today and honestly, I thought it was better than store bought.

Chocolate Pecan bar!! SQUEAL!!
It was not the bittersweet I expected either....not quite milk chocolate but not dark, dark, either. Just rather perfect!


Thank you Jessica Kaye for this recipe!! It is amazingly good! NG sent it to me {he's not stupid, he wants more} after Jessica served it to him. He loved it!

Ingredients

1/2 cup plus 1 tbsp cacao or cocoa powder {I used organic cacao powder}

4 tbsp unrefined coconut oil, melted

NuNaturals vanilla stevia drops to taste. 
(If you'd prefer to use a liquid sweetener, such as agave or pure maple syrup, use this ratio instead: 1/4 cup cocoa powder, 1/4 cup coconut oil, 3 tbsp of your liquid sweetener.)
{Who would prefer that mess?? I used 2 Tablespoons Natural Mate and 2 Tablespoons Tagatose}

Optional extracts, cocoa nibs, or other add-ins {I used 1 tsp vanilla and 1/2 tsp cinnamon and about 1 oz pecans chopped}

Optional 1 extra tbsp oil or water, if it needs to be thinner {Mine did not}

Instructions Homemade Chocolate Bars: 
Combine coconut oil with the liquid sweetener or stevia drops. For the stevia version, I recommend NuNaturals because I find other brands to have an aftertaste. Stir, then add the cacao powder. Stir stir stir! Stir until it gets thick. Pour into any flat container (or candy molds or smush between layers of wax paper or in ziploc bags). Freeze until solid, and store in the freezer.

{Mine didn't thicken like batter or anything, so don't expect that. But as it cooled, it did get a bit thicker. I poured into a wax paper lined pie plate and into the freezer}

Once hardened, you can also opt to melt the bars again for chocolate sauce. Or chop them up for healthy 100% sugar-free chocolate chips!
